I have a mesquite tree (approx 15 years or older) on my property & need to know if there is a right way to trim/thin.

I wish there were answers to your question for me. I am getting ready to trim some of mine on my new property and I can see that they shoot suckers and drip resin. I would like to avoid both of these occurences. I can see that if that if I leave a stub, it will not heal properly. I usually do not attempt to seal up a cut, but I will want to because of the resin vs residential issue. I am no expert. I am actually looking for answers myself.
