I am looking for advice on the selection of an evergreen species that will provide screening for privacy, grow fairly quickly to the 6 ft to say about 15 ft height, and not be generally desireable food for deer during the winter months when food is not plentiful? The area where we need to accomplish this task is upstate New York on the Canadian border!! Any ideas?

Site conditions matter a lot in selecting evergreens, so advice over the internet is not going to help much.
Check with your local DEC office or Cooperative Extension, both of whom should have publications on relatively deer-proof plantings for your area. Extension has a publication called "Resistance of Woody Ornamental Plants to Deer Damage" that should help.
Remember, though, that when deer population is high and little food is available, they will eat anything.
