I am looking for a tree that my parents always called a "Catoppy tree." I have NO idea what the proper spelling is and I can find no help on google.com. Have any of you ever heard of this tree? Any direction you can provide would be great. These trees have white flowers with brown ccenters and produce a long bean like pod.

Tracy, you are looking for a Catalpa tree. A web search should turn up a lot of links. The commonly used species is Catalpa speciosa. There are several others that you might find in some nurseries.
