We live in florida. If we were to plant a cypress tree on our land would it be considered wetlands?

You’ll have to check with your state department of natural resources to find out how wetlands are defined there. In most cases, several criteria have to be met, not just the presence of one or two plants of wetland species. Also, plantings in landscapes probably don’t count. Contact a specialist or the state agency for more information.
